Ingredients
  

For the Strawberries
  • 1 lb Fresh strawberries washed and thoroughly dried, stems on if desired for dipping
For the Protein Yogurt Coating
  • 1 cup Greek yogurt plain, non-fat or low-fat, high protein
  • 1 scoop Vanilla protein powder or chocolate flavored, about 25-30g
  • 1/2 tsp Vanilla extract
  • 1-2 tbsp Sweetener of choice e.g., erythritol, stevia, maple syrup; adjust to taste
For the Chocolate Shell
  • 4 oz Dark chocolate chips or chopped bar, at least 70% cacao for best flavor
  • 1 tsp Coconut oil optional, helps thin the chocolate for a smoother coating

Equipment

  • Parchment Paper
  • Mixing bowl (medium)
  • Whisk or electric hand mixer
  • Microwave-safe bowl or double boiler

Method
 

Prepare the Strawberries & Yogurt Mixture
  1. Line a baking sheet with parchment paper and set aside. Ensure your strawberries are thoroughly washed and completely dry.
  2. In a medium mixing bowl, combine the Greek yogurt, protein powder, vanilla extract, and sweetener. Whisk vigorously or use an electric hand mixer for 1-2 minutes until the mixture is light, fluffy, and well combined with no lumps of protein powder.
Coat and Freeze (First Round)
  1. Holding each strawberry by the stem, dip it into the fluffy yogurt mixture, coating it completely. Allow any excess yogurt to drip off. Place the coated strawberry on the prepared baking sheet.
  2. Repeat with the remaining strawberries. Once all are coated, place the baking sheet in the freezer for at least 60-90 minutes, or until the yogurt coating is completely firm.
Prepare the Chocolate Shell
  1. While the strawberries are freezing, prepare your chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips/chopped chocolate and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth. Alternatively, use a double boiler method.
Final Coating and Freeze
  1. Remove the frozen yogurt-covered strawberries from the freezer. Dip each strawberry into the melted chocolate, allowing any excess to drip off. If the chocolate starts to thicken, gently reheat it.
  2. Place the chocolate-covered strawberries back on the parchment-lined baking sheet. Return them to the freezer for another 15-20 minutes, or until the chocolate shell is firm and set.
  3. Serve immediately or store in an airtight container in the freezer for a delightful protein-packed treat.

Notes

For best results, ensure strawberries are completely dry before dipping in yogurt, and the yogurt layer is fully frozen before dipping in chocolate. This prevents the layers from mixing. You can also drizzle white chocolate or sprinkle chopped nuts on top of the chocolate shell before it sets for extra flair!
