Method
- Preheat oven to 350°F (175°C). Grease a mini muffin pan.
- Cream together butter, granulated sugar, and brown sugar until fluffy.
- Mix in peanut butter, egg, and vanilla extract until combined.
- Whisk together flour, baking soda, and salt. Gradually add to wet mixture.
- Stir in chocolate chips.
- Scoop dough into muffin pan, filling each cup about 2/3 full. Bake for 10–12 minutes.
- Immediately press one mini Reese’s cup into the center of each cookie bite. Cool in pan before removing.
Notes
These cookie bites are best served slightly warm, but can be stored in an airtight container for up to 5 days.
