Method
- Preheat oven to 375°F (190°C).
- In a small bowl, mix the spinach, roasted red peppers, mozzarella, Italian seasoning, and garlic together. Set aside.
- Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach and pepper mixture. Secure with toothpicks if needed.
- Season both sides of the chicken with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken 2–3 minutes per side until golden brown.
- Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove toothpicks, let rest for 5 minutes, and serve warm.
Notes
For extra flavor, drizzle with balsamic glaze or serve with a side of roasted vegetables. You can also swap mozzarella for provolone or feta for a delicious twist.
