Ingredients
  

  • 2 sweet potatoes large
  • 1 tbsp olive oil
  • 1 cup evaporated milk
  • 2 eggs large
  • 3/4 cup brown sugar
  • 1/4 cup maple syrup
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1 pie crust unbaked

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Pierce sweet potatoes, rub with olive oil, and roast on a baking sheet for 45–50 minutes until tender.
  3. Let cool slightly, then lower oven temperature to 350°F (175°C).
  4. Peel and mash the sweet potatoes until smooth.
  5. Mix mashed sweet potatoes with evaporated milk, eggs, brown sugar, maple syrup, butter, and vanilla.
  6. Add spices and salt, then mix until creamy.
  7. Pour filling into the unbaked pie crust and smooth the top.
  8. Bake for 50–55 minutes until set. Cool completely before serving.

Notes

Allow the pie to cool fully for best slicing and texture.
