Sweet Potato Rounds
  • 2 large sweet potatoes sliced into ½-inch rounds
  • 2 tbsp olive oil
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
Toppings
  • 1/3 cup crumbled feta cheese
  • 2 tbsp honey for drizzling
  • 1 tbsp fresh parsley chopped

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
  3. Arrange the rounds in a single layer on the prepared baking sheet.
  4. Roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.
  5. Transfer the roasted rounds to a serving plate. Top with crumbled feta, drizzle with honey, and sprinkle with fresh parsley.
  6. Serve warm or at room temperature as an appetizer or side dish.

Notes

For extra flavor, add a pinch of chili flakes or smoked paprika before roasting. You can also substitute goat cheese for feta if preferred.
