Method
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Arrange the rounds in a single layer on the prepared baking sheet.
- Roast for 20–25 minutes, flipping halfway through, until tender and lightly browned.
- Transfer the roasted rounds to a serving plate. Top with crumbled feta, drizzle with honey, and sprinkle with fresh parsley.
- Serve warm or at room temperature as an appetizer or side dish.
Notes
For extra flavor, add a pinch of chili flakes or smoked paprika before roasting. You can also substitute goat cheese for feta if preferred.
