Ingredients
  

Chicken
  • 2 tablespoons olive oil
  • 4 boneless skinless chicken breasts
  • 1 1/2 cups salsa verde
  • 1 small onion finely sliced
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • salt and black pepper to taste
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • avocado slices and warm tortillas optional, for serving

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts on both sides with salt, black pepper, cumin, and smoked paprika.
  3. Place the chicken in the skillet and cook for 4–5 minutes per side until lightly golden.
  4. Add the sliced onion and minced garlic around the chicken and sauté for 2 minutes until fragrant.
  5. Pour the salsa verde evenly over the chicken.
  6. Reduce heat to low, cover, and simmer for 20–25 minutes until the chicken is fully cooked and tender.
  7. Remove the lid and let the sauce simmer uncovered for 5 minutes to slightly thicken.
  8. Drizzle with fresh lime juice and sprinkle with chopped cilantro.
  9. Serve hot with avocado slices and warm tortillas.

Notes

This chicken is great served in tacos, over rice, or alongside roasted vegetables.
