Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a bowl, whisk the eggs, milk, salt, pepper, and garlic powder.
Heat butter in a skillet over medium heat and pour in the egg mixture.
Cook gently, stirring occasionally, until the eggs are softly scrambled. Remove from heat.
Unroll the crescent dough and separate it into individual triangles.
Add a spoonful of scrambled eggs to the wide end of each triangle.
Top with crumbled turkey sausage and a generous sprinkle of cheddar cheese.
Roll each triangle tightly, starting from the wide end and finishing at the tip.
Place the roll-ups on the prepared baking sheet, tip-side down to prevent unrolling.
Bake for 10–12 minutes, or until golden brown and the cheese is melted.
Sprinkle with fresh chives before serving if desired.
