- Preheat oven to 425°F (220°C). Roll out pizza dough on a lightly floured surface and place it on a greased pizza pan or baking sheet.
- In a skillet, cook the sausage over medium heat until browned. Remove sausage from the skillet, leaving about 2 tablespoons of drippings.
- Add butter to the skillet. Once melted, whisk in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk, stirring constantly until thickened. Add cooked sausage, pepper, and salt. Remove from heat.
- Spread the sausage gravy evenly over the prepared pizza crust.
- Top with scrambled eggs, mozzarella, and cheddar cheese.
- Bake for 12–15 minutes, or until the crust is golden and the cheese is bubbly.
- Sprinkle with green onions before serving. Slice and enjoy warm!
Notes
For a flavor twist, add crumbled bacon or a sprinkle of crushed red pepper. This pizza also reheats beautifully for a quick weekday breakfast.
