Ingredients
  

Sausage Gravy
  • 1 lb breakfast sausage mild or spicy, as preferred
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk warmed
  • 1/2 tsp black pepper freshly ground
  • 1/2 tsp salt to taste
Pie Assembly
  • 1 sheet puff pastry thawed if frozen
  • 1 egg beaten, for egg wash

Method
 

  1. Preheat the oven to 400°F (200°C). Lightly grease a pie dish or baking pan.
  2. In a large skillet, cook the sausage over medium heat until browned and fully cooked. Remove excess fat if necessary.
  3. Add butter to the pan with the sausage, then stir in flour. Cook for 1–2 minutes until the flour is fully absorbed.
  4. Gradually pour in warm milk, stirring constantly until a thick gravy forms. Season with salt and pepper. Remove from heat and let cool slightly.
  5. Roll out the puff pastry sheet to fit your pie dish. Place half of it on the bottom, pressing gently into the pan.
  6. Pour the sausage gravy into the dish and spread evenly.
  7. Top with the remaining puff pastry sheet. Crimp edges to seal and brush the top with beaten egg.
  8. Cut a few small slits on top for steam to escape. Bake for 25–30 minutes, or until golden brown and puffed.
  9. Let rest for 10 minutes before slicing. Serve warm.

Notes

For extra flavor, sprinkle shredded cheddar cheese between the layers of gravy and puff pastry before baking.
