Ingredients
  

Potatoes
  • 2 1/2 lbs baby potatoes or Yukon gold potatoes cut into halves or quarters
  • 1 packet Lipton Onion Soup Mix
  • 3 tbsp olive oil or melted butter
  • 1/2 tsp black pepper to taste
  • fresh parsley chopped, for garnish

Method
 

  1. Wash and cut the potatoes into halves or quarters, depending on size.
  2. In a large bowl, combine potatoes, olive oil (or butter), Lipton Onion Soup Mix, and black pepper. Toss to coat evenly.
  3. Transfer the seasoned potatoes into the slow cooker, spreading them out evenly.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until potatoes are tender and golden around the edges.
  5. Garnish with fresh parsley before serving.

Notes

For extra crispiness, transfer the cooked potatoes to a baking sheet and broil for 3–5 minutes before serving. Try adding a handful of shredded cheddar cheese during the last 15 minutes of cooking for a cheesy twist.
