Simple Chicken Quesadillas

Ingredients
  

  • 2 cups cooked chicken breast shredded or diced
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • salt to taste
  • black pepper to taste
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella or Monterey Jack cheese shredded
  • 4 flour tortillas large
  • 1/4 cup red onion finely sliced
  • 1/4 cup bell pepper thinly sliced
Optional Toppings
  • sour cream
  • salsa
  • cilantro chopped

Method
 

  1. In a bowl, mix the cooked chicken with olive oil, cumin, paprika, salt, and black pepper.
  2. Heat a non-stick skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle cheese over half of it.
  4. Add seasoned chicken, red onion, and bell pepper on top of the cheese.
  5. Sprinkle more cheese on top and fold the tortilla in half.
  6. Cook for 2–3 minutes per side until golden brown and cheese is melted.
  7. Repeat with remaining tortillas, slice into wedges, and serve warm with optional toppings.

You can customize these quesadillas with different cheeses, vegetables, or spices to suit your taste.
