Add onion, bell pepper, and garlic. Cook 3–4 minutes until softened.
Stir in Manwich sauce, corn, smoked paprika, black pepper, and salt. Simmer 5 minutes.
Add cooked pasta and stir to combine.
Transfer mixture to a baking dish and spread evenly.
Top with cheddar and mozzarella cheese.
Bake 20 minutes until cheese is melted and bubbly.
Let rest 5 minutes before serving.
Garnish with chopped parsley and enjoy warm.
