Ingredients
  

  • 1.5 lbs sirloin steak cut into bite-sized cubes
  • 1.5 lbs baby potatoes halved
  • 4 tbsp butter melted
  • 5 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 0.5 tsp onion powder
  • salt and pepper to taste
  • 2 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in a skillet over medium-high heat. Sear the steak bites for 1–2 minutes until lightly browned, but not fully cooked.
  2. Place the halved baby potatoes at the bottom of the slow cooker.
  3. Add the seared steak bites on top of the potatoes.
  4. In a small bowl, whisk together the melted butter, garlic, smoked paprika, thyme, rosemary, onion powder, salt, and pepper.
  5. Pour the garlic butter mixture evenly over the steak and potatoes.
  6. Cover and cook on low for 5–6 hours or on high for 2.5–3 hours, or until the potatoes are tender.
  7. Gently toss before serving and sprinkle with fresh parsley.
