- Heat olive oil in a skillet over medium-high heat. Sear the steak bites for 1–2 minutes until lightly browned, but not fully cooked.
- Place the halved baby potatoes at the bottom of the slow cooker.
- Add the seared steak bites on top of the potatoes.
- In a small bowl, whisk together the melted butter, garlic, smoked paprika, thyme, rosemary, onion powder, salt, and pepper.
- Pour the garlic butter mixture evenly over the steak and potatoes.
- Cover and cook on low for 5–6 hours or on high for 2.5–3 hours, or until the potatoes are tender.
- Gently toss before serving and sprinkle with fresh parsley.
