Ingredients
  

  • 2 lbs chicken thighs or chicken breasts skinless
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 cup BBQ sauce halal-friendly, no alcohol
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or brown sugar
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C) or prepare a grill over medium heat.
  2. Mix salt, pepper, smoked paprika, garlic powder, onion powder, cumin, and chili powder.
  3. Pat chicken dry, rub with olive oil, and coat evenly with the spice mixture.
  4. Cook chicken for 20 minutes, flipping halfway.
  5. Combine BBQ sauce, apple cider vinegar, and honey or brown sugar.
  6. Brush BBQ sauce over chicken and cook for another 10–15 minutes until caramelized and cooked through.
  7. Let rest for 5 minutes, garnish with parsley, and serve.

Notes

This smoky BBQ chicken pairs well with roasted vegetables, rice, or a crisp salad. Leftovers are great for sandwiches or wraps.
