Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking soda, cream of tartar, and salt.
- Gradually add dry ingredients to the butter mixture and mix until a soft dough forms.
- Scoop tablespoon-sized portions and roll each dough ball in granulated sugar.
- Place on the baking sheet, leaving space between cookies.
- Bake for 10–12 minutes, until tops crackle and edges remain soft.
- Cool on tray for 5 minutes before transferring to a rack.
Notes
For extra flavor, roll cookies in a sugar–cinnamon mix or add a hint of almond extract.
