Ingredients
  

Wet Ingredients
  • 1/4 cup cottage cheese low-fat or full-fat, small curd preferred
  • 1-2 tbsp maple syrup or honey, agave, or your preferred liquid sweetener
  • 1/4 tsp vanilla extract
Dry Ingredients
  • 2 tbsp unsweetened cocoa powder Dutch-processed for a darker brownie
  • 2 tbsp all-purpose flour or oat flour for gluten-free
  • 1/4 tsp baking powder
  • pinch salt
Optional Add-ins
  • 1 tbsp chocolate chips mini semi-sweet work best
  • 1 tsp milk any kind, only if batter is too thick

  • Small Mixing Bowl
  • Fork or small whisk

Method
 

Prepare the Batter
  1. In a small mixing bowl, combine the cottage cheese, maple syrup (start with 1 tablespoon and add more later if desired), and vanilla extract. Use a fork or whisk to thoroughly mash the cottage cheese until it's as smooth as possible. A few small curds are fine, but aim for a creamy consistency.
  2. Add the cocoa powder, all-purpose flour, baking powder, and salt to the bowl with the wet ingredients. Mix well with the fork or whisk until no dry streaks remain and a thick, fudgy batter forms. If the batter seems too thick to stir, add 1 teaspoon of milk at a time until it reaches a manageable consistency.
  3. Stir in the optional chocolate chips, if using, until evenly distributed.
Microwave and Serve
  1. Transfer the brownie batter into an 8-10 ounce microwave-safe mug or ramekin. Lightly smooth the top.
  2. Microwave on high for 60-90 seconds. The brownie should be mostly set around the edges but may still look slightly wet in the center. Avoid overcooking, as this can lead to a dry brownie. For extra fudginess, a slightly undercooked center is perfect. You can add another 15-30 seconds if it's too gooey, but be careful.
  3. Carefully remove the mug from the microwave (it will be hot!). Let it cool for 2-3 minutes before enjoying. This allows the brownie to firm up and the flavors to meld.

Notes

For an even smoother cottage cheese texture, you can blend the cottage cheese and sweetener in a small food processor before adding the dry ingredients. Serve warm with a scoop of ice cream or a dollop of whipped cream for an extra treat. This recipe is best enjoyed immediately.
