Method
- Preheat the oven to 350°F (175°C) and grease or line a loaf pan.
- Whisk bananas, carrots, oil, eggs, vanilla, granulated sugar, brown sugar, and yogurt until smooth.
- Mix flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt in a separate bowl.
- Fold dry ingredients into the wet mixture until no dry streaks remain.
- Add walnuts and gently fold them in.
- Pour batter into loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra texture, add a handful of shredded coconut or raisins to the batter.
