  • 2 ripe bananas mashed
  • 1 cup grated carrots
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/2 cup walnuts chopped
  • 1/4 cup yogurt

Method
 

  1. Preheat the oven to 350°F (175°C) and grease or line a loaf pan.
  2. Whisk bananas, carrots, oil, eggs, vanilla, granulated sugar, brown sugar, and yogurt until smooth.
  3. Mix flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt in a separate bowl.
  4. Fold dry ingredients into the wet mixture until no dry streaks remain.
  5. Add walnuts and gently fold them in.
  6. Pour batter into loaf pan and smooth the top.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra texture, add a handful of shredded coconut or raisins to the batter.
