Ingredients
  

For the Air Fryer Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp cornstarch
  • 1 tbsp olive oil
For the Bang Bang Sauce
  • 1/2 cup mayonnaise full-fat recommended
  • 1/4 cup sweet chili sauce
  • 1-2 tbsp Sriracha adjust to taste for spice level
  • 1 tbsp honey or maple syrup
  • 1 tsp rice vinegar unseasoned
  • 1/2 tsp garlic powder
For Serving
  • 2 cups uncooked jasmine rice
  • 1 large cucumber diced or thinly sliced
  • 2 avocados diced
  • 2 tbsp fresh cilantro chopped, for garnish
  • 1 tbsp sesame seeds for garnish

Method
 

Prepare the Chicken
  1. Pat the cubed chicken dry with paper towels. In a large mixing bowl, toss the chicken with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  2. Sprinkle the cornstarch over the seasoned chicken and toss again until each piece is lightly coated. This will help create a crispy exterior.
  3. Preheat your air fryer to 375°F (190°C) for 3-5 minutes. Lightly spray the air fryer basket with cooking spray.
  4. Place the chicken in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding. Cook for 12-15 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature of 165°F / 74°C).
Make the Bang Bang Sauce
  1. While the chicken is cooking, prepare the Bang Bang sauce. In a small mixing bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, and garlic powder until smooth and well combined.
  2. Taste the sauce and adjust the Sriracha or honey to your preference for spice and sweetness.
Prepare Rice and Toppings
  1. Cook the jasmine rice according to package instructions. Typically, combine 2 cups of rice with 4 cups of water in a saucepan, bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
  2. Dice the cucumber and avocados, and chop the fresh cilantro.
Assemble the Bowls
  1. Once the chicken is cooked, transfer it to a clean large mixing bowl. Pour about two-thirds of the Bang Bang sauce over the chicken and toss gently to coat each piece.
  2. Divide the cooked jasmine rice evenly among four serving bowls. Top each bowl with the sauced Bang Bang chicken.
  3. Arrange the diced cucumber and avocado next to the chicken in each bowl. Drizzle the remaining Bang Bang sauce over the chicken and toppings.
  4. Garnish with fresh chopped cilantro and sesame seeds. Serve immediately, with lime wedges on the side if desired.

Notes

For extra crispiness, you can lightly spray the chicken with oil before air frying. If you don't have an air fryer, you can bake the chicken at 400°F (200°C) for 20-25 minutes, flipping halfway. This dish is great for meal prep; store chicken and sauce separately and combine before serving for best results. Add other veggies like shredded carrots or edamame for more nutrition.
