Spicy Cajun Shrimp and Sausage Kebabs

Ingredients
  

For the Cajun Marinade
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1 tbsp lemon juice
  • 1 tbsp Worcestershire sauce
  • to taste Salt and black pepper
For the Kebabs
  • 1 lb large shrimp peeled, deveined, tails on or off
  • 14 oz Andouille sausage pre-cooked, sliced into 1-inch thick rounds
  • 1 large red bell pepper cut into 1-inch pieces
  • 1 large green bell pepper cut into 1-inch pieces
  • 1 medium red onion cut into 1-inch wedges
  • 1 tbsp fresh parsley chopped, for garnish

Equipment

  • 12-inch Wooden or Metal Skewers

Method
 

Prepare the Marinade
  1. In a large mixing bowl, whisk together olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, lemon juice, Worcestershire sauce, salt, and black pepper until well combined.
  2. Add the peeled and deveined shrimp, sliced Andouille sausage, red bell pepper pieces, green bell pepper pieces, and red onion wedges to the bowl with the marinade. Toss gently to ensure all ingredients are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.
Preheat & Assemble
  1. Preheat your chosen cooking appliance:
  2. - **Grill**: Preheat outdoor grill to medium-high heat (approx. 400-450°F / 200-230°C). Lightly oil the grill grates.
  3. - **Oven**: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil and lightly grease.
  4. - **Air Fryer**: Preheat air fryer to 375°F (190°C).
  5. Thread the marinated shrimp, sausage, bell peppers, and red onion alternately onto the skewers. Aim for 3-4 shrimp per skewer, depending on size, and distribute other ingredients evenly to make about 8-10 kebabs.
Cook the Kebabs
  1. Cook the kebabs using your preferred method:
  2. - **Grill**: Place kebabs on the preheated grill. Cook for 3-4 minutes per side, turning occasionally, until shrimp are pink and opaque, and vegetables are tender-crisp with nice char marks. Total cooking time is about 12-16 minutes.
  3. - **Oven**: Arrange kebabs on the prepared baking sheet in a single layer. Bake for 15-20 minutes, flipping halfway through, until shrimp are cooked through and vegetables are tender.
  4. - **Air Fryer**: Place kebabs in a single layer in the air fryer basket (you may need to cook in batches). Cook for 12-15 minutes, flipping halfway through, until shrimp are pink and cooked and vegetables are tender.
  5. Remove kebabs from heat. Garnish with fresh chopped parsley and serve immediately with rice, cornbread, or a side salad.

Notes

For extra spice, add a pinch more cayenne pepper to the marinade. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. These kebabs are also delicious served with a side of remoulade sauce.
