Ingredients
  

Fries Base
  • 4 large russet potatoes cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • salt and black pepper to taste
Cheese & Toppings
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 3 jalapenos thinly sliced
  • 4 oz cream cheese softened
  • 2 green onions sliced
  • 1 tablespoon fresh cilantro chopped

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss potato fries with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Spread evenly on the baking sheet and bake 25–30 minutes, flipping halfway, until golden and crispy.
  4. In a small bowl, mix softened cream cheese until smooth; set aside.
  5. Remove fries from oven and sprinkle cheddar and mozzarella cheeses evenly over the top.
  6. Dollop small spoonfuls of cream cheese across the fries.
  7. Scatter jalapeno slices over the cheese layer.
  8. Return fries to oven for 5–7 minutes until cheeses are fully melted and bubbling.
  9. Remove from oven, sprinkle with green onions and cilantro, and serve immediately.

Notes

For an extra kick, drizzle with spicy mayo or add crumbled bacon before baking.
