Method
- In a bowl, mix together cream cheese, cheddar cheese, diced jalapeños, and crumbled bacon until well combined.
- Place about 2 tablespoons of the filling onto the center of each egg roll wrapper.
- Brush the edges of the wrapper with beaten egg. Fold in the sides and roll tightly to seal.
- Heat oil in a deep fryer or large skillet to 350°F (175°C).
- Fry egg rolls in batches until golden brown and crispy, about 3–4 minutes.
- Drain on paper towels and serve hot with ranch or your favorite dipping sauce.
Notes
For extra heat, leave some seeds in the jalapeños or add a dash of hot sauce to the filling.
