Ingredients
  

Ramen
  • 2 packs ramen noodles seasoning discarded
  • 8 oz turkey sausage sliced
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tbsp grated ginger
  • 2 tbsp soy sauce
  • 1 tbsp chili paste or sriracha
  • 3 cups chicken broth
  • 1 cup bok choy chopped
  • 1/2 cup shredded carrots
  • 2 green onions sliced
  • 2 eggs
  • 1 tsp vegetable oil
  • salt and pepper to taste

Method
 

  1. Heat sesame oil in a saucepan over medium heat. Add garlic and ginger, cooking for 1 minute until fragrant.
  2. Add sliced turkey sausage and sauté for 4–5 minutes until lightly browned.
  3. Pour in chicken broth, soy sauce, and chili paste. Bring to a gentle simmer.
  4. Add bok choy and carrots, cooking for 3–4 minutes until tender.
  5. In a separate pan, heat vegetable oil over medium heat and fry the eggs sunny-side up. Season with salt and pepper.
  6. Add ramen noodles to the broth and cook for 2–3 minutes until softened.
  7. Divide the ramen into bowls, top with the fried egg, and sprinkle green onions.
  8. Serve hot and enjoy.

Notes

Adjust spice level easily by adding more chili paste or a drizzle of chili oil.
