- Heat sesame oil in a saucepan over medium heat. Add garlic and ginger, cooking for 1 minute until fragrant.
- Add sliced turkey sausage and sauté for 4–5 minutes until lightly browned.
- Pour in chicken broth, soy sauce, and chili paste. Bring to a gentle simmer.
- Add bok choy and carrots, cooking for 3–4 minutes until tender.
- In a separate pan, heat vegetable oil over medium heat and fry the eggs sunny-side up. Season with salt and pepper.
- Add ramen noodles to the broth and cook for 2–3 minutes until softened.
- Divide the ramen into bowls, top with the fried egg, and sprinkle green onions.
- Serve hot and enjoy.
Notes
Adjust spice level easily by adding more chili paste or a drizzle of chili oil.
