- Heat olive oil in a large pot over medium heat. Add onion and sauté for 3–4 minutes until softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in the ground turkey and cook until browned, breaking it apart with a spoon.
- Season with dried basil, oregano, chili flakes, salt, and black pepper.
- Pour in the vegetable broth, tomato sauce, and water. Bring to a gentle boil.
- Add broken lasagna noodles and reduce heat to a simmer. Cook 12–15 minutes, stirring occasionally, until noodles are tender.
- Stir in the spinach and cook for 2 minutes until wilted.
- In a small bowl, combine ricotta, mozzarella, and Parmesan.
- Ladle the soup into bowls and top with a generous spoonful of the cheese mixture. It melts beautifully into the hot soup.
Notes
Add extra chili flakes for a spicy kick, or swap turkey for Italian sausage for deeper flavor.
