Ingredients
  

Soup Base
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 lb ground turkey
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp chili flakes
  • salt and black pepper to taste
  • 4 cups vegetable broth
  • 3 cups tomato sauce
  • 1 cup water
  • 8 lasagna noodles broken into pieces
  • 4 cups fresh spinach chopped
Cheese Topping
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté for 3–4 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in the ground turkey and cook until browned, breaking it apart with a spoon.
  4. Season with dried basil, oregano, chili flakes, salt, and black pepper.
  5. Pour in the vegetable broth, tomato sauce, and water. Bring to a gentle boil.
  6. Add broken lasagna noodles and reduce heat to a simmer. Cook 12–15 minutes, stirring occasionally, until noodles are tender.
  7. Stir in the spinach and cook for 2 minutes until wilted.
  8. In a small bowl, combine ricotta, mozzarella, and Parmesan.
  9. Ladle the soup into bowls and top with a generous spoonful of the cheese mixture. It melts beautifully into the hot soup.

Notes

Add extra chili flakes for a spicy kick, or swap turkey for Italian sausage for deeper flavor.
