Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, granulated sugar, and powdered sugar until light and fluffy.
- Add the egg and vanilla extract and mix until fully combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture until a soft dough forms.
- Scoop tablespoon-sized portions of dough, roll into balls, and roll lightly in powdered sugar.
- Place on the baking sheet and gently press an indent into the center of each cookie.
- Fill each indent with about 1/2 teaspoon of strawberry jam.
- Bake for 10–12 minutes, until edges are set. Remove from oven and immediately press a strawberry kiss into the center.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For best results, unwrap the strawberry kisses before baking so they are ready to press into the warm cookies.
