  • 8 slices brioche or challah bread thick slices
  • 1 cup fresh strawberries diced
  • 4 oz cream cheese softened
  • 2 tablespoons honey
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup milk
  • 1 tsp cinnamon
  • 1 tablespoon sugar
  • 2 tablespoons butter
  • powdered sugar for serving
  • extra sliced strawberries for topping
  • maple syrup or honey for serving

Method
 

  1. In a small bowl, mix the softened cream cheese, honey, and half of the diced strawberries until smooth and spreadable.
  2. Spread the strawberry cream mixture onto four slices of bread, then top with the remaining slices to form sandwiches.
  3. In a shallow dish, whisk together eggs, milk, vanilla extract, cinnamon, and sugar.
  4. Heat a skillet over medium heat and melt 1 tablespoon of butter.
  5. Dip each stuffed sandwich into the egg mixture, soaking both sides thoroughly.
  6. Cook each sandwich for 3–4 minutes per side or until golden brown and crisp. Add the remaining butter as needed.
  7. Slice in half, dust with powdered sugar, and top with extra strawberries.
  8. Serve warm with honey or maple syrup.
