- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- In a large bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix until smooth.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
- Fold in the vanilla extract, chopped pecans, and shredded coconut.
- Pour batter into the prepared baking dish and spread evenly.
- Bake for 30–35 minutes, or until golden and a toothpick comes out clean.
- Let cool before slicing to allow the texture to set.

For extra flavor, lightly toast the pecans before mixing them into the batter!
