Ingredients
  

Salmon
  • 4 salmon fillets
  • 1 tbsp olive oil
  • salt and black pepper to taste
Glaze
  • 1/3 cup apple juice
  • 2 tbsp maple syrup
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp vanilla extract
  • 1/2 tsp smoked paprika
  • 2 garlic cloves minced
  • 1 tsp cornstarch mixed with 1 tbsp water
  • lemon wedges for serving
  • green onions chopped, for garnish

Method
 

  1. Pat the salmon fillets dry and season both sides with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Place the salmon skin-side down and cook for 4–5 minutes until golden and crispy.
  4. Flip the salmon and cook for another 2–3 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add garlic and sauté for about 30 seconds until fragrant.
  6. Stir in apple juice, maple syrup, brown sugar, soy sauce, Dijon mustard, vanilla extract, and smoked paprika.
  7. Bring the mixture to a gentle simmer and cook for 3–4 minutes.
  8. Add the cornstarch mixture and stir until the glaze thickens.
  9. Return the salmon to the skillet and spoon the glaze over the fillets.
  10. Simmer for 2–3 minutes until the salmon is fully coated and glossy.
  11. Remove from heat, garnish with green onions, and serve with lemon wedges.
