Sweet Potato Hand Pies

Flaky, golden hand pies filled with warmly spiced sweet potatoes, feta cheese, and fresh herbs. Perfect as a snack, appetizer, or light meal.

Ingredients
  

Sweet Potato Filling
  • 2 sweet potatoes peeled and cubed
  • 1 tbsp olive oil
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • salt to taste
  • black pepper to taste
  • 1/2 cup onion sautéed, finely chopped
  • 1/3 cup feta cheese crumbled
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme leaves
Assembly
  • 2 sheets ready-made pie dough
  • 1 egg beaten, for egg wash
  • 1 tbsp sesame seeds or black seeds optional

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Boil the sweet potato cubes in lightly salted water for 12–15 minutes until fork-tender. Drain well.
  3. Mash the sweet potatoes with olive oil, cinnamon, nutmeg, salt, and pepper until smooth.
  4. Stir in the onion, feta cheese, parsley, and thyme until evenly combined.
  5. Roll out the pie dough and cut into 4–5 inch circles.
  6. Spoon filling onto one half of each dough circle, fold over, and crimp edges with a fork.
  7. Arrange on baking tray, brush with egg wash, and sprinkle with seeds if using.
  8. Bake for 22–25 minutes until golden brown. Cool slightly before serving.

Notes

These hand pies freeze well before baking. Simply freeze assembled pies, then bake from frozen with a few extra minutes added.
