Ingredients
  

  • 2 lbs sweet potatoes peeled and diced
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1/2 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • salt and black pepper to taste
  • fresh cilantro or parsley chopped, for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft and translucent, then add garlic and cook briefly.
  3. Add sweet potatoes and spices, stirring to coat evenly.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer until sweet potatoes are very tender.
  6. Puree the soup until smooth using an immersion blender or countertop blender.
  7. Stir in coconut milk, season with salt and pepper, and simmer briefly.
  8. Serve hot, garnished with fresh herbs.

Notes

Add a pinch of chili flakes or a swirl of coconut cream for extra flavor.
