Method
- Heat olive oil in a large pot over medium heat.
- Sauté onion until soft and translucent, then add garlic and cook briefly.
- Add sweet potatoes and spices, stirring to coat evenly.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer until sweet potatoes are very tender.
- Puree the soup until smooth using an immersion blender or countertop blender.
- Stir in coconut milk, season with salt and pepper, and simmer briefly.
- Serve hot, garnished with fresh herbs.

Add a pinch of chili flakes or a swirl of coconut cream for extra flavor.
