Taco Bell Beefy Melt Burrito

This homemade version of Taco Bell’s Beefy Melt Burrito is packed with seasoned ground beef, melty cheese, rice, and a creamy sauce — all wrapped in a warm flour tortilla. It’s the perfect copycat comfort meal that’s quick and satisfying!

Ingredients
  

Beef Filling
  • 1 lb ground beef lean preferred
  • 1 packet taco seasoning or 2 tbsp homemade mix
  • 2/3 cup water for taco seasoning mix
Burrito Components
  • 2 cups cooked rice preferably seasoned Mexican rice
  • 1 cup nacho cheese sauce store-bought or homemade
  • 1 cup shredded cheddar cheese or Mexican blend
  • 1/2 cup sour cream
  • 4 large flour tortillas burrito size
Optional Toppings
  • diced tomatoes
  • sliced jalapeños
  • chopped green onions

Equipment

  • Large Skillet
  • Microwave or stovetop for warming tortillas

Method
 

  1. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  2. Add taco seasoning and water. Stir and simmer for 5 minutes, until thickened and flavorful.
  3. Warm the tortillas in the microwave or on a skillet until soft and pliable.
  4. Spread a layer of nacho cheese sauce onto the center of each tortilla. Add a scoop of rice, followed by a spoonful of seasoned beef, a sprinkle of shredded cheese, and a dollop of sour cream.
  5. Top with optional ingredients like tomatoes, jalapeños, or green onions if desired.
  6. Fold the sides of the tortilla in and roll up tightly into a burrito. For a crispy finish, grill the burrito seam-side down in a dry skillet for 1–2 minutes per side until golden and sealed.

Notes

Make it spicy by adding hot sauce or using Taco Bell’s creamy chipotle sauce. You can also swap beef for ground turkey or plant-based crumbles for a lighter version.
