- In a bowl, combine soy sauce, fish sauce, brown sugar, garlic, turmeric, and vegetable oil. Add chicken strips and toss to coat. Marinate for at least 1 hour (or up to overnight).
- Thread marinated chicken onto skewers.
- Preheat grill or grill pan to medium-high heat. Grill skewers for about 3–4 minutes per side, until cooked through and slightly charred.
- Meanwhile, prepare the peanut sauce: combine peanut butter, soy sauce, lime juice, brown sugar, coconut milk, and sriracha in a small saucepan. Warm gently over low heat, whisking until smooth.
- Serve the chicken satay warm with the peanut sauce on the side for dipping.
Notes
Soak wooden skewers in water for 30 minutes before grilling to prevent burning. For extra flavor, garnish with chopped peanuts and cilantro before serving.
