- Preheat the oven to 375°F (190°C).
- Lightly grease a baking dish with olive oil.
- Spread the hash browns evenly across the bottom of the baking dish.
- Sprinkle the turkey ham, red bell pepper, and green onions evenly over the hash browns.
- In a bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and black pepper.
- Pour the egg mixture evenly over the layered ingredients.
- Top with shredded cheddar and mozzarella cheese.
- Bake uncovered for 40–45 minutes, until the center is set and the top is golden.
- Remove from the oven and let rest for 5 minutes before slicing.
- Garnish with fresh chives or parsley if desired, and serve warm.
Notes
This breakfast bake can be prepared the night before and baked in the morning. Feel free to swap in different vegetables or cheeses.
