Ingredients
  

  • 12 oz chicken or turkey sausage sliced
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp dried thyme
  • 1/4 tsp crushed red pepper flakes optional
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup water
  • 16 oz potato gnocchi
  • 2 cups fresh spinach chopped
  • 1/2 cup Parmesan-style cheese grated
  • salt to taste
  • black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add sausage and cook for 4–5 minutes until lightly browned. Remove and set aside.
  3. Add onion to the pot and sauté for 3–4 minutes until softened.
  4. Stir in garlic, Italian seasoning, thyme, and red pepper flakes; cook for 30 seconds.
  5. Pour in chicken broth, water, and heavy cream, stirring to combine.
  6. Bring to a gentle simmer and add gnocchi.
  7. Cook for 3–4 minutes until gnocchi float and are tender.
  8. Return sausage to the pot and add spinach.
  9. Simmer for 2–3 minutes until spinach is wilted.
  10. Stir in Parmesan-style cheese, season with salt and black pepper, and remove from heat.
  11. Serve hot with extra cheese if desired.

Notes

This soup thickens as it cools—add a splash of broth when reheating if needed.
