- Heat olive oil in a large pot over medium heat.
- Add sausage and cook for 4–5 minutes until lightly browned. Remove and set aside.
- Add onion to the pot and sauté for 3–4 minutes until softened.
- Stir in garlic, Italian seasoning, thyme, and red pepper flakes; cook for 30 seconds.
- Pour in chicken broth, water, and heavy cream, stirring to combine.
- Bring to a gentle simmer and add gnocchi.
- Cook for 3–4 minutes until gnocchi float and are tender.
- Return sausage to the pot and add spinach.
- Simmer for 2–3 minutes until spinach is wilted.
- Stir in Parmesan-style cheese, season with salt and black pepper, and remove from heat.
- Serve hot with extra cheese if desired.
Notes
This soup thickens as it cools—add a splash of broth when reheating if needed.
