Ingredients
  

Salad
  • 3 ripe pears cored and thinly sliced
  • 4 cups mixed winter greens arugula, spinach, kale
  • 1/2 cup walnuts lightly toasted
  • 1/3 cup dried cranberries
  • 1/4 cup goat cheese crumbled
Dressing
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • salt to taste
  • black pepper to taste

Method
 

  1. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until well combined.
  2. Wash and thoroughly dry the winter greens, then place them in a large salad bowl.
  3. Arrange the sliced pears evenly over the greens.
  4. Add the toasted walnuts and dried cranberries.
  5. Drizzle the dressing over the salad just before serving.
  6. Gently toss to coat all ingredients without bruising the pears.
  7. Finish by sprinkling crumbled goat cheese over the top.
  8. Serve immediately as a refreshing winter side or light main dish.

Notes

For added protein, top with grilled chicken or roasted chickpeas. Best served fresh.
